Put your cauliflower florets into salted boiling water and cook until fork-tender
Drain your cauliflower and let sit in the strainer for a few minutes to let all the extra water evaporate out.
Put your cauliflower back into your pot. Use a potato masher or immersion blender to make them smooth. You can also use a blender or food processor for this step.
Once smooth mix in ghee, coconut milk, garlic powder, and salt/pepper to taste.
Optional-Garnish with more ghee and green onions.
Directions for Instant Pot
Put florets in IP with ¼ cup of broth. Cook on high pressure for 4 minutes.
Release the pressure from the IP and open the lid.

Notes
***If using the Instant Pot, once you steam your cauliflower and take off the lid and more than 1/4 cup of broth is in the pot take out the excess before mashing or blending.
