Equipment

  • air fryer
  • frying pan

Ingredients

  • 3/4 cup almond flour
  • 2 tbsp tapioca flour
  • 1 tsp sea or Himalayan salt
  • 1 tsp paprika, garlic, onion powder
  • 1/2 tsp dried oregano
  • 4 tbsp avocado oil for pan frying
  • avocado, coconut, olive oil spray for air fryer
  • 18 ounces chicken tenders or 2-3 chicken breast fillets
  • 1 egg

Instructions

  • In a shallow dish, combine all fours, salt, and spices. Mix well to combine.
  • In a separate bowl, combine your chicken tender strips and 1 whisked egg. Combine well. If using breasts, cut into tenders or nuggets.
  • Begin breading the strips by taking the chicken with egg on it into the flour mixture. Coating each side evenly. Work in batches till all chicken is breaded.
  • If pan frying these, heat your avocado oil over med-high heat. Pan fry on each side for 3-4 mins each. You can also put these into the air fryer (spray the tenders with cooking spray, which helps to get them a crispy and golden color. Work in batches till all tenders are cooked.
  • I like to put them on a baking rack to cool once they are finished cooking. Alternatively, you could place them on a few paper towels.
