Servings: 4
- 3/4 cup almond flour
- 2 tbsp tapioca flour
- 1 tsp sea or Himalayan salt
- 1 tsp paprika, garlic, onion powder
- 1/2 tsp dried oregano
- 4 tbsp avocado oil for pan frying
- avocado, coconut, olive oil spray for air fryer
- 18 ounces chicken tenders or 2-3 chicken breast fillets
- 1 egg
In a shallow dish, combine all fours, salt, and spices. Mix well to combine.
In a separate bowl, combine your chicken tender strips and 1 whisked egg. Combine well. If using breasts, cut into tenders or nuggets.
Begin breading the strips by taking the chicken with egg on it into the flour mixture. Coating each side evenly. Work in batches till all chicken is breaded.
If pan frying these, heat your avocado oil over med-high heat. Pan fry on each side for 3-4 mins each. You can also put these into the air fryer (spray the tenders with cooking spray, which helps to get them a crispy and golden color. Work in batches till all tenders are cooked.
I like to put them on a baking rack to cool once they are finished cooking. Alternatively, you could place them on a few paper towels.
