World Famous Chili
I have made my chili recipe in 4 different countries and it is always a hit. It is not a complicated recipe and has simple ingredients you can find in most grocery stores around the world. It is true comfort food and the perfect recipe for the Super Bowl coming up soon!

- 2 tablespoons avocado or extra virgin olive oil
- 1 cup chopped yellow onion
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- 4 garlic cloves minced
- 2 pounds ground/minced beef
- 3 tablespoons chili powder spice mix, not just ground chilis
- 2 tablespoons ground cumin
- 2 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons coconut aminos you could do GF soy or Worcestershire sauce if you have no diet restrictions
- 2 tablespoons tomato paste
- 2 cans crushed tomatoes
- 2 cans rinsed kidney black, or pinto beans (omit if strict Paleo)
- 1/2 cup broth
- 2 teaspoons kosher salt divided
- ½ teaspoon ground black pepper
Put oil in a large pot over medium heat. Sauté onion, green bell pepper, and red bell pepper until tender, 8 to 10 minutes. During the last minute of cook time stir garlic into onion mixture and cook until fragrant, about 1 minute.
Crumble beef into the pot with onion and pepper mixture. Break up the beef while it cooks. You want to get a good brown and sear on the ground beef. You may have to let any water cook out of the beef if it releases any water. This is a very important step as you do not want your beef mushy. Searing it will give it so much flavor. This could take anywhere from 20-25 mins depending on if you have to cook out the water. It will start to stick to the bottom of the pot at the very end. Season with 1 teaspoon of the sea salt and some black pepper.
Add in the beans if you are using them, crushed tomatoes, tomato paste, spice mixture, coconut aminos, broth, and the rest of the sea salt/pepper.
Bring mixture to a boil. Cook for 5 mins.
Lower heat to low medium and simmer for 30-40 mins. It will thicken as it cooks. Leave it uncovered for the last 10 mins of cooking time. Add additional broth if it thickens too much.
Season to taste with more salt and pepper if needed.
****Use the coconut aminos if you have it on hand. Gives a nice umami flavor.
****My kids love to top their chili with Fritos, shredded cheese, and sour cream.
****For a more Paleo friendly option you can top with Simple Mills Almond Crackers or Siete Tortilla Chips, diced green or red onions, and guacamole for some healthy fats.
****Top with your favorite hot sauce and enjoy.
