Servings: 12
- 3/4 cup fine almond flour
- 1/4 cup tapioca flour
- 1/4 cup coconut sugar
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1 tbsp melted coconut oil
- 1 tbsp pure vanilla extract
- 1 large egg
- 2 tbsp finely diced pecans for inside the cookie
- 1-2 tbsp roughly chopped pecans for the top of the cookie
Preheat oven to 350F or 177C. Grease baking sheet.
Mix all your dry ingredients. Almond and tapioca flour, coconut sugar, salt, cinnamon, baking soda, and finely diced pecans.
Add in your egg, coconut oil, and vanilla to the dry ingredients. Mix well.
Continue to mix until you have large coarse crumbs. It will seem like there will not be enough liquid but once you knead the dough it will come together.
Knead the dough until you have a nice ball of dough.
Each cookie will be 1 tablespoon of dough. Using your tablespoon to scoop out and roll dough into a ball. Dip one side of the ball in your roughly chopped pecans. Place on baking sheet. Repeat until all dough is rolled and dipped in pecans.
Use your hand to flatten the cookies down a bit. This will help for the pecans on top to stick. They will rise a bit when baking.
Bake for 10-12 mins. They will continue to firm up as they cool. Do not overbake.
****You could also add some chocolate chips to the top before you bake them if you want a chocolate fix!
****Store any leftovers in the fridge. They are yummy cold.
