Calling all my friends who have a sweet tooth but do not want to send their blood sugar into overdrive. They are not too sweet, nice and soft, with a crunchy bite of pecans. These only require a handful of ingredients and would be perfect with your afternoon cup of tea or coffee. These Paleo cookies are grain-free, gluten-free, dairy-free, and unrefined sugar free…can not get better than that!

Paleo Pecan Sandie Cookies

These only require a handful of ingredients and would be perfect with your afternoon cup of tea or coffee. They are a healthier for you version of the classic Keebler Pecan Sandies. These Paleo cookies are grain-free, gluten-free, dairy-free, and unrefined sugar-free…can not get better than that!

Ingredients

  • 3/4 cup fine almond flour
  • 1/4 cup tapioca flour
  • 1/4 cup coconut sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 tbsp melted coconut oil
  • 1 tbsp pure vanilla extract
  • 1 large egg
  • 2 tbsp finely diced pecans for inside the cookie
  • 1-2 tbsp roughly chopped pecans for the top of the cookie

Instructions

  • Preheat oven to 350F or 177C. Grease baking sheet.
  • Mix all your dry ingredients. Almond and tapioca flour, coconut sugar, salt, cinnamon, baking soda, and finely diced pecans.
  • Add in your egg, coconut oil, and vanilla to the dry ingredients. Mix well.
  • Continue to mix until you have large coarse crumbs. It will seem like there will not be enough liquid but once you knead the dough it will come together.
  • Knead the dough until you have a nice ball of dough.
  • Each cookie will be 1 tablespoon of dough. Using your tablespoon to scoop out and roll dough into a ball. Dip one side of the ball in your roughly chopped pecans. Place on baking sheet. Repeat until all dough is rolled and dipped in pecans.
  • Use your hand to flatten the cookies down a bit. This will help for the pecans on top to stick. They will rise a bit when baking.
  • Bake for 10-12 mins. They will continue to firm up as they cool. Do not overbake.

Notes

****You could also add some chocolate chips to the top before you bake them if you want a chocolate fix!
****Store any leftovers in the fridge. They are yummy cold.
