I can remember back to when I did my first Whole30 in 2018 and made my first batch of homemade mayo and I thought what kind of sorcery is this?!? I have always hated mayo but this was just another level of deliciousness and just way too easy to make. It only takes a few simple ingredients and an immersion blender and you have a great base to make different salad dressings, dips, and sauces.
You can also get creative with add-ins to the mayo and have your own signature mayo for your next burger night. Think roasted garlic, chipotle, French onion, there are so many options to add to make a gourmet mayo. We love dipping roasted potatoes, fries, and other meats into these gourmet mayo creations.
It is important to use extra light olive oil in this recipe as extra virgin or avocado can give it quite a peculiar taste. Also, you will need a tall wide rim jar or container to mix it all in. Sometimes your immersion blender comes with this tall and wide container and that is perfect to use.
You now know how to make mayo with no unrefined seed oils, preservatives, and additives. It takes less than a minute to whip up and is beyond superior in taste. Enjoy!
1 Minute Paleo Mayo
Equipment
- immersion blender
Ingredients
- 1 egg room temp is best but not 100% necessary
- 3/4 cup extra light olive oil do not use extra virgin or avocado
- 2 tsp lemon juice
- 2 tsp mustard yellow, spicy brown, or Dijon will work
- 1/2 tsp sea salt
Instructions
- Put all of the ingredients into your tall and wide container.
- Place immersion blender at the very bottom of the container. Turn it on and hold it at the bottom for 20-30 seconds as it starts to emulsify. Then slowly bring the immersion blender up to the top of the mayo mixture and back down again. Move it up and down for another 20 seconds until it has completely emulsified and has a nice thick consistency.
- Leave plain or add in any of the ingredients mentioned in the blog post. Blend for 10 seconds to mix.
- Store in the fridge.
