How to get this nice, thin, crispy crust?

The secret to this crust is that we will make a batter, not a dough. Do not add all the water at one time. Gradually add it in so it is the right consistency. Pour the batter into a hot skillet, similar to a crepe or thin pancake. You want to get it nice and crispy in the skillet, letting it cook for a few minutes on each side. Transfer to a baking rack where you will add cheese (if using), sauce, and pizza toppings. I like to use VioLife Brand vegan cheese as it does not have a ton of junky ingredients in it and it melts nicely. It has a bit of a funky smell not cooked but has the best taste of all plant-based cheeses I have tried. I put the baking rack with the pizzas on them into a hot oven. Baking them on a baking rack instead of a pan will keep them nice and crispy and easy to get out of the oven.

Alternatively, if you like a super crunchy crust you could first cook it in the skillet like mentioned above, then transfer the crust to a hot oven and bake for 10 minutes. Take it out, add sauce, toppings, etc. then put back into the oven for an additional 8-10 minutes.

Another great meal prep idea is to make a bunch of crusts ahead of time and then freeze them individually. You then have ready-made crusts ready to go anytime a pizza craving strikes. Here is a quick video on how to make them!

Ingredients

  • 1 cup almond flour
  • 1 cup tapioca flour
  • 1 tbsp coconut flour
  • 2 eggs whisked
  • 2/3-1 cup water start with 2/3 cup add more if it needs to be thinned out
  • pinch salt

Instructions

  • Heat up a skillet over medium heat. Pre-heat oven to 200C with fan assist if your oven has it.
  • Mix dry ingredients together in a bowl and mix well.
  • Add wet ingredients to the dry ingredients and mix well. Start with a 2/3 cup of water, then slowly add more if needed. Batter should be thin. Similar to crepe or pancake batter.
  • Spray or grease your skillet. Pour the batter into a hot skillet. 1/3 to 1/2 cup for a mini pizza or double for a large pizza. Cook for a few minutes, getting each side nice and crispy. Transfer to an oven-safe baking rack.
  • Add sauce, cheese (if using), and pizza toppings. Put the baking rack with pizza on it directly into the oven, this will keep it crispy and easier than putting pizza directly on the oven rack. Bake for 8-10 minutes or until crispy and the cheese is melted.
