I would imagine the title of this recipe can be a bit deceiving as the Paleo diet is grain-free which means no oats. This is the grain-free version of Overnight Oats with that comforting banana bread flavor. These Paleo Banana Bread Overnight Oats are so easy to make and great if you like to prep breakfast for the week. I also love the versatility of having the option of eating them cold or warming them up. These are very filling but without the grain brain and bloat of oats. These are sweetened with a ripe banana and have plenty of plant protein from the chia and hemp seeds. A big warm bowl of comfort to get you going in the morning is sometimes just what the Dr. ordered. I wanted to create a Paleo oatmeal that makes you feel like you are not missing out and keeps you full and satiated. I have tried a few pre-packaged Paleo Oatmeal options that are available and not a single one tasted good. One was so expensive and tasted like soap…yes like literal soap, it was awful. The other brand was completely tasteless and also overpriced. My Paleo Banana Bread Overnight Oats is far from tasteless and won’t have you missing your grain-filled oats. This is also a great option even if you are not Paleo but just looking for some better for you or low-carb options. These are also a perfect snack for kids to have as well.

What Will You Need?

You only need a few simple ingredients to make this delicious recipe.

  • Chia and Hemp Seeds
  • Pecan, Almond, or Walnut Flour (take your nuts and finely chop them)
  • Very Ripe Banana
  • Splash of Vanilla
  • Pinch of Salt
  • Pinch of Cinnamon
  • Splash of Maple Syrup (optional)
  • Milk of Choice (I used almond milk)
  • Glass Jar or Container

Smash up your banana in your jar or container. Mix in all the other ingredients. Give it a good stir and pop into the refrigerator overnight or for at least a few hours. I like to top mine with additional bananas and nut butter. Viola! So easy.

Paleo Banana Bread Overnight Oats

Ingredients

  • 1 very ripe banana smashed
  • 2 tbsp hemp seeds
  • 2 tbsp chia seeds
  • 1/4 cup pecan, almond, or walnut flour finely diced nuts
  • 1 splash vanilla extract
  • 1 pinch Sea or Himalayan salt
  • 1 pinch cinnamon
  • 1 cup milk of choice I used almond milk
  • 1 tsp maple syrup optional

Instructions

  • Smash your banana in your jar or container.
  • Add all additional ingredients. Mix well.
  • Put into refrigerator overnight or for at least one hour.
  • When ready to eat serve with additional bananas or nut butter. You could also top it with whatever you like on your oatmeal.
