Who knew that 2 simple ingredients could make such delicious caramel? This recipe will blow your mind. So easy and cool to watch as it goes from white liquid to thick and creamy caramel. This 2 Ingredient Caramel is not only dairy free but also refined sugar-free. You can put it on top of cookies, or brownies, use it to make a caramel latte, or drizzle it on top of apples.

What are the Magic Ingredients

  • Coconut Cream – the thick part of the canned coconut milk/cream
  • Maple Syrup – this will be the sweetener in this recipe

That is it! So simple but full of that classic caramel taste. You could add a pinch of salt and/or vanilla extract once it is done cooking but it is not necessary.

How to Make It!

In a saucepan bring the coconut cream and maple syrup to a boil. Then lower the heat to a simmer and cook down for another 12-16 minutes. The last 5 minutes of cooking is where the magic happens. It will slowly start to turn to that caramel color and get thicker. It will get that thick creamy texture once it cools off. So letting it cool is very important. Add a pinch of salt and/or vanilla extract if you prefer once you take it off the heat. Store your leftovers in the fridge for up to 7 days.

Ingredients

  • 1 cup coconut cream canned, if using coconut milk chill the can and use the cream
  • 6 tbsp maple syrup

Instructions

  • In a saucepan, combine the coconut cream and maple syrup.
  • Bring to a boil, then lower to a simmer.
  • Simmer for 12-16 minutes. Cook down till it gets dark in color and begins to thicken.
  • Take it off the heat. Add in a pinch of salt and/or vanilla extract if you would like (optional). It will thicken up even more as it cools.

Notes

Store leftovers in the fridge for up to 7 days. Reheat over low heat if needed.
