Servings: 4 large crusts

Ingredients

  • 1 cup almond flour
  • 1 cup tapioca flour
  • 1 tbsp coconut flour
  • 2 eggs whisked
  • 2/3-1 cup water start with 2/3 cup add more if it needs to be thinned out
  • pinch salt

Instructions

  • Heat up a skillet over medium heat. Pre-heat oven to 200C with fan assist if your oven has it.
  • Mix dry ingredients together in a bowl and mix well.
  • Add wet ingredients to the dry ingredients and mix well. Start with a 2/3 cup of water, then slowly add more if needed. Batter should be thin. Similar to crepe or pancake batter.
  • Spray or grease your skillet. Pour the batter into a hot skillet. 1/3 to 1/2 cup for a mini pizza or double for a large pizza. Cook for a few minutes, getting each side nice and crispy. Transfer to an oven-safe baking rack.
  • Add sauce, cheese (if using), and pizza toppings. Put the baking rack with pizza on it directly into the oven, this will keep it crispy and easier than putting pizza directly on the oven rack. Bake for 8-10 minutes or until crispy and the cheese is melted.
  • *****Alternatively, if you like a super crunchy crust you could first cook it in the skillet like mentioned above, then transfer the crust to a hot oven and bake for 10 minutes. Take it out, add sauce, toppings, etc. then put it back into the oven for an additional 8-10 minutes.

Notes

You can also prep the crusts and cook them ahead of time and freeze them individually for future use.
This recipe make 6-8 mini pizzas or 4-5 regular size pizzas.
