These waffles are just what you need for your next brunch or brinner (breakfast for dinner)! You throw all your ingredients into a blender and bam you have your waffle batter all ready to go. Simple, delicious, and will not sit heavy in your gut like most waffles. These are sweetened with a ripe banana so no additional sweetener is needed. Of course, they are DF, GF, refined sugar-free, and grain-free. Try them out this weekend!
I have a Belgium waffle maker, which makes the big waffles that segment into 4 pieces. I was able to make 3 Belgium waffles with this recipe. If you use a regular waffle maker you will get many more waffles out of the batch. I would say 6-10 depending on your waffle maker size. This recipe is also easy to double if needed.
These are great to freeze and have on hand for the kids before school or for an afternoon snack.
Have fun with your toppings. Top with nut butter, yogurt, berries, dates, maple syrup, or anything you like. These go great with my Blueberry Coconut Syrup. We love our waffles with a side of bacon and eggs. Enjoy!
Paleo Pumpkin Spice Waffles

- waffle maker
Ingredients
- 1 1/4 cup superfine almond flour
- 1/4 cup tapioca flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1/2 cup pure pumpkin puree
- 2 eggs room temp
- 1/2 cup almond milk room temp
- 2 tbsp coconut oil
- 1 tbsp vanilla extract
- 1 tsp pumpkin pie spice blend
- 1/4 tsp cinnamon
Cinnamon Apples
- 1 apple sliced thin
- 1 tsp coconut oil
- 1/2 tsp cinnamon
Instructions
- Pre-heat your waffle maker.
- Put all ingredients into your blender. Mix until smooth. Around 30-45 seconds.
- Pour batter into waffle maker.
- Cook until crispy.
- Repeat till all batter is used up.
- Top waffles with your favorite toppings.
Cinnamon Apples
- Sauté over medium heat 1 thinly sliced apple in 1 tsp of coconut oil and 1/2 tsp of cinnamon for 1-2 minutes.
