Pumpkin season is upon us people! I am ready for all things Fall, bring on the pumpkin flavored everything. I love to use Libby’s brand canned pumpkin for all my pumpkin recipes. It is easily accessible at most stores. These waffles are not lacking in those delicious warm Fall flavors. I love to top them with warm sautéed cinnamon apples, toasted pecans, and pure maple syrup. These Paleo Pumpkin Spiced Waffles are grain, gluten, dairy, and refined sugar free. They really hit the spot for weekend breakfast or brunch.
I love to throw all my ingredients right into the blender to keep things easy. This also gets your batter super smooth. I like to use a Pumpkin Spice Blend to get that delicious pumpkin pie flavor. Do not forget to grease your waffle maker so the waffles do not stick.
These are amplified by topping them with sauteed cinnamon apples. Thinly slice an apple and sauté in 1 tsp of coconut oil and 1/2 tsp of cinnamon. Cook apples for 1-2 minutes. I also like to toast up my chopped pecans to add an additional layer of flavor. These waffles are so good and will not disappoint. These freeze well and also go great in a lunchbox for an easy snack.

Paleo Pumpkin Spice Waffles
Equipment
- blender
- waffle maker
Ingredients
- 1 1/4 cup superfine almond flour
- 1/4 cup tapioca flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1/2 cup pure pumpkin puree
- 2 eggs room temp
- 1/2 cup almond milk room temp
- 2 tbsp coconut oil
- 1 tbsp vanilla extract
- 1 tsp pumpkin pie spice blend
- 1/4 tsp cinnamon
Cinnamon Apples
- 1 apple sliced thin
- 1 tsp coconut oil
- 1/2 tsp cinnamon
Instructions
- Pre-heat your waffle maker.
- Put all ingredients into your blender. Mix until smooth. Around 30-45 seconds.
- Pour batter into waffle maker.
- Cook until crispy.
- Repeat till all batter is used up.
- Top waffles with your favorite toppings.
Cinnamon Apples
- Sauté over medium heat 1 thinly sliced apple in 1 tsp of coconut oil and 1/2 tsp of cinnamon for 1-2 minutes.
