Light Bulb Moment

Many years ago, when we moved abroad and were living in the small country of Brunei, I met a fellow American named Angie and we became great friends…Hi Angie! We both loved to cook and would often share recipes with each other. One night I watched her cut up broccoli and put it into the oven and I thought how in the world have I never thought about doing this?!? Roasted anything is always superior in taste. Over the years I have perfected this recipe to make it even better.

I make this Crispy “Fried” Broccoli often and it is one of the few vegetables my kids never complain about eating. My kids have so lovingly named it Burnt Broccoli, but I figured that name is not too enticing to others. We like to get the broccoli extra crispy…almost burnt!

The trick to getting the broccoli nice and crispy is putting your empty sheet pan into the oven and getting it nice and hot. Take it out after 15 minutes and place your broccoli on it. Then roast it up till it is crispy and fried looking. You will never eat steamed broccoli ever again.

Crispy Fried Broccoli

Ingredients

  • 1 large head broccoli cut into florets you can use the stem to if you like
  • 2-3 tablespoons melted ghee depending on how much broccoli you have
  • ½ teaspoon garlic powder
  • Sea salt to taste

Instructions

  • Preheat your oven to 400F or 204C.
  • Put in your baking sheet and let it get nice and hot.
  • Leave in for 15 minutes.
  • In a bowl, put in your broccoli, melted ghee, sea salt, and garlic powder. Mix well.
  • Once your baking sheet is hot, put your broccoli mixture onto the hot baking sheet into a single layer. Give broccoli room to crisp up.
  • Cook for 15-20 minutes. Turning broccoli over halfway through cooking.
  • Cooking time will vary depending on your oven. Let it bake up till the edges are nice and brown and crispy.

Notes

***This is a great recipe to double if your family eats lots of veggies. Just use 2 baking sheets to give veggies enough room to crisp up.
