Every once in a while ya girl needs some pasta in her life. Even better…no boil, casserole style for an easy and so so good dinner. My family gave me lots of praise after I made this for dinner, they could not get enough. This was a no leftovers type of dinner situation. You would never know that this pasta dish has no dairy in it as it comes out so creamy from the canned coconut milk. I used Jovial Brand grain-free cassava pasta but feel free to use any GF or regular pasta you like.

Start by frying up some minced/ground Italian sausage. I like to keep bigger meat crumbles rather then tiny pieces of meat. Get a good sear/crust on the meat. You can also use beef, chicken, turkey or whatever you prefer. Throw in your spinach and lightly sauté. Does not need to be fully wilted down. Now take the meat, spinach, pasta, pasta sauce, coconut milk, and additional spices and mix all together into your baking dish. Can also top with a bit of vegan or regular cheese if you prefer. Bake for 40 mins or until your noodles are cooked. Let rest for 5-10 minutes before serving. Enjoy!

No Boil Pasta Bake

Everyone needs a no boil, casserole style recipe on their hands for an easy and so so good dinner. You would never know that this pasta dish has no dairy in it as it comes out so creamy from the canned coconut milk. Ingredients

  • 13 ounces grain-free gluten-free or regular pasta, roughly 1 box
  • 1 pound ground/minced Italian sausage can also use minced beef, chicken, or turkey
  • 1 can full-fat coconut milk
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil pinch of fresh basil
  • 1/2 teaspoon sea salt
  • 12 ounces spinach
  • 1 19- ounce jar tomato basil sauce or use your favorite pasta sauce
  • handful of vegan or regular cheese for the top optional
  • pinch fennel seeds if not using Italian sausage

Instructions

  • Preheat oven to 400 degrees and take out a 9×13 or square baking dish
  • Heat up a sauté pan and fry/sear up your Italian sausage. Once fully cooked and in your spinach. Mix well but do not completely wilt the spinach.
  • Take your baking dish and put in meat/spinach, pasta, sauce, coconut milk, and seasonings. Mix well to combine.
  • Sprinkle cheese (if using) on top then cover the dish with tin foil.
  • Bake in oven for about 40 minutes then remove foil and broil for about 1 minute so the cheese starts to bubble.
  • Remove from oven and let rest for a few minutes. Serve wile still warm.

Notes

If not using Italian sausage you can add some additional spices like fennel and extra oregano to your meat.
