When I first started dabbling in eating Paleo or grain-free if you will have it, I created this recipe and it has been on repeat ever since. Sometimes we forget that such simple ingredients can create such an easy and delicious meal. No matter if you are a regular gluten eater or not these are sure to wow you! They are perfectly served with an easy side dish or thrown onto a salad. I like to pack them in my children’s lunchboxes as well. I use a few simple Paleo-friendly flours, spices, and no-seed oils to create the perfect chicken tenders. They are gluten-free, grain-free, and Whole30 friendly.
These are a breeze to make. Mix up all your flours, salt, and spices. I like to buy the chicken tender strips as they are more tender and ready to use as you do not have to cut them. You can also use breasts and cut them into strips or nuggets. Cut the cooking time if making nuggets as they will cook faster. Coat chicken in egg. Bread each tender, getting a nice coating on each one. You can pan-fry these in avocado oil or use your air fryer. If using the air fryer method use cooking spray to lightly coat them before you cook them. This helps to get them crispy and golden. I like to let them cool on a wire rack or you can just place them on paper towels as well. They are great reheated as well. Just pop them back into the air fryer to reheat and crisp back up.
Get creative with homemade dips you can serve with the chicken tenders. Some of our favorites are spicy mustard and honey mixed together. Another winner is mayo, ketchup, mustard, and honey to get a copycat like Chic Fil A sauce taste. Enjoy!
Grain Free Chicken Fingers

- air fryer
- frying pan
Ingredients
- 3/4 cup almond flour
- 2 tbsp tapioca flour
- 1 tsp sea or Himalayan salt
- 1 tsp paprika, garlic, onion powder
- 1/2 tsp dried oregano
- 4 tbsp avocado oil for pan frying
- avocado, coconut, olive oil spray for air fryer
- 18 ounces chicken tenders or 2-3 chicken breast fillets
- 1 egg
Instructions
- In a shallow dish, combine all fours, salt, and spices. Mix well to combine.
- In a separate bowl, combine your chicken tender strips and 1 whisked egg. Combine well. If using breasts, cut into tenders or nuggets.
- Begin breading the strips by taking the chicken with egg on it into the flour mixture. Coating each side evenly. Work in batches till all chicken is breaded.
- If pan frying these, heat your avocado oil over med-high heat. Pan fry on each side for 3-4 mins each. You can also put these into the air fryer (spray the tenders with cooking spray, which helps to get them a crispy and golden color. Work in batches till all tenders are cooked.
- I like to put them on a baking rack to cool once they are finished cooking. Alternatively, you could place them on a few paper towels.
