The best part about them is that you create zero waste by using the pulp leftover from your nut milk. Can’t beat that!

Almond Butter Brownie Bites

These brownie bites are made with leftover nut pulp from making my own almond milk. They taste like a raw brownie and hit the spot when you need something sweet to eat.

Ingredients

  • 1/2 cup Leftover pulp from your nut milk. if you do not have nut pulp use 1/2 cup almond flour with a few splashes of milk
  • 4 to 5 large gooey Medjool dates if your dates are dry soak them in boiling water for 10 mins
  • 2 tablespoons almond butter
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 cup ground chia seeds
  • 1/4 cup ground flax seeds
  • 1 tablespoon melted coconut oil
  • 2 tablespoons dark chocolate chips Hu brand is refined sugar-free and DF
  • Pinch salt

Instructions

  • In your food processor put the nut pulp, dates, almond butter, coconut oil, and vanilla extract blend together till it makes a paste.
  • Take the paste and put it into a bowl then mix in the cocoa powder, salt, ground chia, and flax. Mix all together. Once well-blended add in your chocolate chips.
  • Use a tablespoon to scoop out the dough and roll into balls.
  • You can roll the balls in cocoa powder, crushed nuts, fine coconut flakes, anything that tickles your fancy. You can also just leave them as is. Put them in the fridge for a few hours for them to harden up.
