- It is “Soup Weather People”! I make some version of this soup weekly. It takes less then 20 mins to make in the Instant Pot (can also be made on the stove) so perfect for those days you do not have much time to cook. It is perfect for any veggies you have left that need to be used up. You can swap out asparagus for any veggie really.
Dairy Free Cream of Asparagus Soup
A delicious and creamy dairy-free soup. Chock full of veggies and coconut milk this soup is comforting and satisfying.
Servings: 4
Ingredients
- 1 large zucchini
- 1 large onion
- 4 cloves garlic
- 4 cups your favorite broth good quality bone broth is best
- 1 tsp Cajun seasoning or just salt/pepper
- 1 tsp garlic powder
- A few splashes your fav hot sauce
- 1 pinch dried thyme and oregano
- 1 can full fat coconut cream or coconut milk can sub 1/2 cup of heavy cream if you are not DF
Instructions
- Turn your instant pot on to sauté.
- Chop up your onion and garlic.
- Put 2 tablespoons of avocado oil in your instant pot.
- Sauté chopped onions for five minutes.
- While onions are sautéing dice up your asparagus and zucchini .
- During the last 30 seconds of the onion sautéing throw in your minced garlic.
- Throw your chopped zucchini and asparagus into the instant pot. Season with Cajun seasoning thyme and oregano.
- Pour in your 4 cups of broth into the pot.
- Set Instant pot to high pressure for 3 minutes. Once finished let it naturally release for 5 minutes. Then release all the steam out of the instant pot and take the lid off.
- Take out 1 cup of broth out of your pot. You can add it back in later after you blend the soup if you want it less thick. (See note below.)
- Use an immersion blender or a regular blender to purée the soup smooth.
- Add in one can of coconut cream or coconut milk and mix all together.
- Season your soup with more salt and pepper if needed.
Notes
If you do not own an instant pot fret not. Just simmer on the stove for 15-20 mins till your veggies are super soft.
This soup is super versatile and you can use any veggies you like. Broccoli and leek, butternut squash, or pumpkin.
Throw a poached egg or sautéed shrimp on top for some extra protein.
You can add in a few sprinkles of nutritional yeast to your bowl to add a cheesy flavor.
