It was 5:00 p.m. as I peered into my almost empty fridge and I thought, oh great I have nothing to make for dinner. I had a few odds and ends that needed to be used up and that is when inspiration struck…” Clean Out the Fridge Quiche” it is.

This is one of my money-saving and also no food waste hacks…instead of going to the grocery store the day you need groceries, try waiting a day and create a meal out of whatever you have left in your fridge that would otherwise go to waste. It not only saves you time and money but also gives you a chance to get creative and confident in the kitchen. We do not always need a recipe for everything. Sometimes you just need to play around with what you have and you will be so surprised by what you come up with.

I made and baked a simple crust. I literally just chopped up all the veggies and cooked protein. I sautéed veggies in a few tablespoons of avocado oil. Threw in the cooked protein right at the end. Season with salt and pepper. You can get fancy and add other spices if you like. The good thing about eggs is they can take on lots of different flavor profiles, so have fun and explore.

This can be made for breakfast, lunch, or dinner. It is very versatile. Add some fruit for breakfast or a side salad to make it a complete lunch or dinner.

Ingredients

Cassava Crust Ingredients

  • 1 cup Cassava Flour
  • 3/4 cup melted ghee or 1/2 cup of avocado oil I prefer the taste of ghee
  • Pinch salt
  • 3-4 tablespoons water

Quiche Ingredients

  • 8 eggs
  • 1/3 cup full fat coconut milk
  • 1-1 1/2 cups Any veggies and cooked protein you like
  • 2 Tablespoons avocado or extra virgin olive oil
  • 1/4 cup vegan or regular cheese Omit if you are strict paleo or can’t tolerate dairy.

Instructions

Crust Directions

  • Preheat oven to 350 degrees Fahrenheit or 176 Celsius.
  • In a medium mixing bowl, combine Cassava Flour, salt, melted ghee or avocado oil, and water.
  • Grease your baking dish so your quiche does not stick.
  • Press into a 9-inch pie dish or a square baking dish and place on a baking sheet.
  • Using a fork, poke holes all over the bottom of the crust.
  • Bake for 12 minutes to par-bake your crust.

Quiche Directions

  • Sauté your chopped veggies in 2 tablespoons of oil, cook for 5-6 mins on med to high heat to soften veggies. Throw in any cooked protein if you are using any. Season with salt and pepper.
  • Scramble up your eggs and coconut milk in a bowl. Season egg mixture to taste with salt and pepper.
  • Put your cooked veggie mixture into your pre-baked crust. Spread into a single layer. Top with cheese if you are using any.
  • Pour egg mixture on top of the veggie mixture.
  • Bake for 30 to 35 mins depending on your oven. Start checking it around 25 mins and insert a toothpick into the center to check if the egg mixture is cooked through.
  • Let cool for a few mins before eating and enjoy!

Notes

Some Good Flavor Combos
Spinach, bacon, and onion. Sun-dried tomato and pesto. Asparagus and prosciutto. Caramelized onion, spinach, and sweet potato. Get creative and use what you have.
**I do not currently own a pie dish so I made mine in just a regular baking dish. Use what you have!
