If you love mashed potatoes but are looking for a more low-carb side dish, then this recipe is the one for you. You can make these on the stove or in your Instant Pot. These are a great replacement for rice or mashed potatoes but double as your veggies. These are paleo, grain-free, gluten-free, dairy free, and Whole30 compatible. Win-win!
Cauliflower Mash
A low-carb take on mashed potatoes. These are creamy, dairy-free, and delicious and are a great side dish.
Servings: 5
Ingredients
- 1 head cauliflower cut into florets
- ¼ cup broth
- 2 tbsp ghee
- ¼ cup full-fat coconut cream or milk
- ½ tsp garlic powder
- Sea salt and pepper to taste
- Ghee and chopped green onions to garnish optional
Instructions
- Put your cauliflower florets into salted boiling water and cook until fork-tender
- Drain your cauliflower and let sit in the strainer for a few minutes to let all the extra water evaporate out.
- Put your cauliflower back into your pot. Use a potato masher or immersion blender to make them smooth. You can also use a blender or food processor for this step.
- Once smooth mix in ghee, coconut milk, garlic powder, and salt/pepper to taste.
- Optional-Garnish with more ghee and green onions.
- Directions for Instant Pot
- Put florets in IP with ¼ cup of broth. Cook on high pressure for 4 minutes.
- Release the pressure from the IP and open the lid.
- Use a potato masher or immersion blender to make them smooth. You can also use a blender or food processor for this step.
- Once smooth mix in ghee, coconut milk, garlic powder, and salt/pepper to taste.
- Optional-Garnish with more ghee and green onions.
Notes
***If using the Instant Pot, once you steam your cauliflower and take off the lid and more than 1/4 cup of broth is in the pot take out the excess before mashing or blending.
